Does anyone have any very quick, cheap pasta and vegetarian recipes that I can pass on to my daughter who is going off to uni in sept.

boil pasta and keep aside, in a pan saute onions, finely chopped ginger garlic, add asparagus, capsicum (red,yellow,green), chopped zuchinni, sliced aubergines and saute till cooked, then add red chillies, a dash of red wine vinegar, ground black pepper, salt to taste, 1/2 tspn of oregano, few sprigs of parsley, 2 tbspns of red chilli sauce and saute add the pasta and mix well, and ready to eat.

pesto sauce and pasta is good, quick and easy now that they sell ready made pesto sauce, very nice and not so heavy

I used to make pasta sauces off from scratch ( pesto, tomato based, white sauces etc) but found out that supermarket pasta sauces with a bit of tweaking are equally good, too. She could just throw in some blanched veggies ( carrots, broccolis, cauliflower, asparagus, zucchini etc) .
as for other recipes : Here's my quick and easy ones
stuffed tomatoes-- take seed/juice out , season and stuffed with either cooked spinach, couscous with veggies or pesto rice and make on a high oven for 20 minutes.
Stuffed capsicum -- she could use just tomatoes and anchovy fillet as in piedmont pepper or she could use tomatoes, buffalo mozzarella and boiled lentils with basil and olive oil and bake for 30-40 minutes on high.

this ones a classic;
Boil pasta, towards the end chuck in a handful of sweetcorn. Allow to cool. Mix in a tin of tunu. Maya and pepper to taste. Viola!

Cook pasta and broccoli together in the same water. In the meantime, saute garlic and pine nuts or walnuts. When the broccoli is tender (should be before the pasta is done) spoon it into the pan with the nuts and mash it around a bit. Add the pasta when its done, and some cheese (I use parmesan). Season to taste, add a little chili if you like.

My daughter, who is attending college has the following recipes/tips. Being students, they will improvise. If non-vegetarian, she can add chicken to the recipe.
1. Keep a small stock of frozen vegetables( corn, carrots, brocolli), which are useful when fresh veg is not available.
2. Boil 2-3 meals of pasta , divide and freeze in separate container/ziplocks
3. Have a supply of tinned tomato soup, pesto, cheese slices, parmesan etc.
Recipe 1:
Assemble cooked pasta with frozen veg and drizzle liberally with tomato soup, add a slice of cheese and microwave.
Recipe 2:
Drizzle some olive oil on pan and stir fry some chopped onion, cooked pasta with veg. Add some pesto sauce, dish up & top with parmesan.
Recipe 3:
Add pasta & veg into 1/2 bowl of clear soup and heat up in microwave or hob. Similar to a Chinese noodle soup.
